The Perfect Chocolate Mixer
The P Series mixer is the perfect mixer for chocolate applications. The PIN-shaped mixing elements are round and delicate with no harsh edges. The spacing of the rotor and stator can be varied to easily pass large soft solids like nuts and puffed rice.
The mixer comes standard with a jacketed housing to temper the product as it moves through the mixer. There is little to no pressure drop which aids in its delicate handling of product.
The same PIN-shaped mixing elements are commonly used on the INFINI-MIXER Continuous Solid-Liquid Mixer where multiple streams of delicate inclusions can be fed directly into the mixer along with multiple liquid streams. In addition to delicate soft solids, these ingredient streams can include fine powders like cocoa powder or flavorings. They can also include minute amounts of liquid flavorings and aromas like mint or orange essences.
The chocolate industry commonly uses static mixers for small amounts of flavoring. However, sometimes the amount of flavoring and aroma is so small that it is difficult to get complete dispersion of the flavoring through the product. The P Series Mixer evenly disperses the flavoring without more than a 1º temperature increase.
The P series mixer is the perfect chocolate mixer for Late Stage Differentiation. Also referred to as “END OF PIPE” applications, the mixer is placed at the end of the process to dose in the differentiating ingredients like nuts, raisins or flavoring. When switching recipes, you only need to clean from the mixer forward while leaving the base chocolate line feeding the mixer in tact. The only product lost is the small volume inside the mixer. This is a big cost savings and huge time saver.
